Adobe Tutorial for Creating an Illustrator Poster
From Illustrator, click (file > new from template), navigate to samples files, sample art and browse through poster ideas. Each poster has a tutorial in the How Did They Do That! folder. They may not open as multi-page PDF's, so just google the title of the work you choose, and it should show up from a site on the Adobe link.
Create a poster in the style of one of the samples, but in your own style.
